AMARÁS Mezcal Logia Cenizo
PROFILE
Mezcal Amarás Logia Cenizo is an artisanal mezcal originating on the hillsides of Nombre de Dios, Durango, made from a 14-year-old wild agave known scientifically as Agave durangensis. A common characteristic of this sacred agave is its sheer enormity, reaching a weight of 500kg / 1100 lbs. when harvested. The plant’s prefered habitat is on the slopes of Durango’s rocky hillsides spotted with oak trees.
UNIQUENESS
Amarás Logia Cenizo expands your horizon onto the rich biodiversity of wild agaves outside Oaxaca with its characteristic smoky notes. The spirit is crafted using a unique artisanal recipe that roasts the agave using \ local mesquite and huisache wood. In keeping with its craft tradition, it is milled with an ax, taking five times longer and requiring 20 to 25 kg / 30 to 33 lbs. of agave to make one single liter of mezcal. The spirit is then naturally fermented in rectangular vats buried at ground level to maintain a stable temperature in the extreme climate of Durango (31°C / 87.8°F during the day, 13°C / 55.4°F at night). As a final touch, it is distilled in a copper still with a wooden cap which imparts the final, decisive notes to the elixir.
